    Yellow Pea Soup with Ham

    Ingredients:

    • 1 ham bone with some meat
    • 2½ cups yellow split peas
    • 5 stalks celery, diced
    • 4 carrots, diced
    • ½ large sweet onion, diced
    • 1 cup diced ham
    • 1 Tbsp. kosher salt
    • 2 tsp. black pepper
    • 2 tsp. dried thyme
    • 1 bay leaf
    • 4 cups water
    • 4 cups chicken broth
    • for garnish parsley

    Directions:

    1. Place ham bone, yellow split peas, celery, carrots, onion, seasonings and bay leaf into a large pot; pour in water and broth.
    2. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat and place a lid on the pot, slightly ajar to allow some evaporation. Simmer, stirring occasionally, until yellow split peas are tender and soup is thick, about 3 hours.
    3. Remove ham bone from soup. Remove any meat from bone back into soup.
    4. Serve with croutons and parsley.
