    First Lady Justice’s Cornbread

    This recipe won blue ribbon at the West Virginia State Fair

    Ingredients:

    • 1 cup yellow cornmeal
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1 tsp. baking soda
    • 1/16 tsp. salt
    • 1 cup buttermilk
    • 1 egg, slightly beaten
    • 1/4 cup canola oil

    Directions:

    1. Preheat the oven to 425 F. Oil an 8×8 pan.
    2. Mix all dry ingredients. Add liquids. Stir just to mix.
    3. Bake 30 minutes until golden brown.
    4. For added fun, bake your cornbread in a cast-iron skillet.
