Any Day’s a Picnic Chicken Salad

    Ingredients:

    • 2 1/2 c. chicken breast,* cooked and diced
    • 1/2 c. celery, chopped
    • 1/4 c. onion, chopped
    • 2 Tbsp. pickle relish
    • 1/2 c. light mayonnaise

    Directions:

    1. Rinse and prepare celery and onion.
    2. Combine all ingredients.
    3. Refrigerate until ready to serve.
    4. Use within two days.
    5. Note: Chicken salad doesn’t freeze well.
    6. How to use: Make chicken salad sandwiches.
    7. Make a pasta salad by mixing with 2 cups of cooked pasta shells.
    8. Serve this as a salad in a hollowed-out tomato or cucumber boat.
    9. Try using leftover grilled chicken.
    10. Makes six servings.
