Cream Style Corn Bread

    Ingredients:

    • 1 cup CORNMEAL
    • 3/4 cup FLOUR
    • 1 small ONION
    • 1 can (14 3/4 ounces) LOW-SODIUM CREAM STYLE CORN
    • 1/4 cup OIL
    • 1/2 cup LOW-FAT MILK
    • 1 EGG

    Directions:

    1. Preheat oven to 400° F.
    2. Spray a 12-cup muffin pan or an 8×8-inch or 9×9-inch pan with nonstick cooking spray.
    3. In medium sized bowl, mix together cornmeal and flour.
    4. Add cream style corn, milk, onion and eggs.
    5. Pour into the flour mixture; stir just enough to blend.
    6. Place in pan and bake for 15-20 minutes or until a toothpick or fork inserted in the bread comes out clean.

    Serving Size: 1 serving – Yield: 6 servings
