Zucchini Scallop

    Ingredients:

    • 2 cups zucchini, cooked
    • 2 cups saltine crackers, crumbled
    • 2 Tbsp. minced onion
    • 1 cup cheese, cubed
    • 1 cup milk
    • 1 egg, beaten
    • 2 Tbsp. melted butter
    • pepper

    Directions:

    1. Layer zucchini, crackers, onion and cheese in a 2 qt. greased casserole.
    2. Combine milk and egg.
    3. Pour over zucchini mixture.
    4. Pour butter over all.
    5. Sprinkle with pepper and bake at 350° for 45 minutes.
