    Zucchini Pineapple Bread

    Ingredients:

    • 3 eggs
    • 1 cup oil
    • 2 cups sugar
    • 3 cups all purpose flour
    • 1 tablespoon vanilla extract
    • 1 teaspoon baking powder
    • 2 cups grated zucchini
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1/2 cup raisins
    • 1 tablespoon cinnamon
    • 1 cup chopped nuts
    • 1 (8 ounce) can crushed pineapple, undrained

    Directions:

    1. Grease a bundt pan.
    2. Heat oven to 325°.
    3. Beat eggs until fluffy; add oil, sugar, vanilla and zucchini.
    4. Combine flour, baking powder, baking soda and salt in bowl.
    5. Add to egg mixture; mix well.
    6. Add raisins, pineapple and nuts.
    7. Blend well.
    8. Bake in 325° oven for 1 hour and 20 minutes or toothpick in center comes out clean.
