Zucchini Banana Bread

    Ingredients:

    • 1 1/2 cups all-purpose flour
    • 1 cup sugar
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 egg
    • 1 cup mashed ripe bananas
    • 1/2 cup canola oil
    • 1/2 teaspoon banana extract
    • 1/2 teaspoon vanilla extract
    • 1 cup shredded zucchini
    • 1/2 cup chopped walnuts

    Directions:

    1. In a large bowl, combine the first six ingredients.
    2. In a small bowl, beat the egg, bananas, oil and extracts.
    3. Stir into dry ingredients just until moistened.
    4. Fold in zucchini and walnuts.
    5. Transfer to three 5-3/4-inch by 3-inch by 2-inch loaf pans coated with cooking spray.
    6. Bake at 325° for 40-45 minutes or until a toothpick inserted near the center comes out clean.
    7. Cool for 10 minutes before removing from pans to wire racks.
    8. Yield: 3 mini loaves (6 slices each).
