    Watermelon Jicama Salad

    Ingredients:

    • 6 cups cubed watermelon (seedless preferred)
    • 1 cup chopped jicama
    • ¼ cup chopped red onion
    • ¼ cup chopped fresh parsley
    • 1 Tbsp. chopped fresh mint
    • 5 Tbsp. fresh lime juice
    • ½ cup crumbled feta cheese
    • ¾ tsp. kosher salt

    Directions:

    1. Combine watermelon and next 5 ingredients in a large bowl.
    2. Add cheese and toss gently.
    3. Sprinkle with salt and serve immediately.
