    Summer Corn and White Bean Soup

    Ingredients:

    • 2 Tbsp. butter or canola oil
    • 1 cup green onions, sliced
    • 1 cup cooked ham, cubed
    • 3 cups fresh white corn
    • ½ tsp.salt
    • ½ tsp. white pepper
    • 1 tsp. garlic powder
    • 2 15-oz. cans navy beans, rinsed and drained
    • 2 14-oz. cans fat-free, less-sodium chicken broth
    • 2 4.5-oz. cans chopped green chiles, undrained
    • 1 cup heavy cream

    Directions:

    1. Heat butter or oil in a Dutch oven over medium heat.
    2. Add onions and ham, and cook 4 minutes, stirring frequently. Stir in corn and remaining ingredients.
    3. Bring to a simmer, reduce heat and continue cooking for 5 to 10 minutes or until thoroughly heated.
