Soft Pumpkin Spice Drop Cookies

    Ingredients:

    • 1/4 cup applesauce unsweetened
    • 1/4 cup brown sugar
    • 2 tbsp butter melted
    • 1 egg
    • 1/3 cup pumpkin puree
    • 1/2 cup oat flour
    • 1/2 cup all-purpose flour
    • 1/2 tsp baking soda
    • 1 tsp pumpkin pie spice

    Directions:

    1. Preheat oven to 375 degrees.
    2. Beat egg in a medium bowl. Add applesauce, brown sugar, melted butter, and pumpkin puree. Whisk to combine.
    3. In a separate large bowl, stir together oat flour, all-purpose flour, baking soda, and pumpkin spice.
    4. Gently combine wet ingredients with dry ingredients. Stir until incorporated.
    5. Using a parchment lined baking sheet, drop cookies by the tablespoon. Place in oven and bake 10-12 minutes depending on oven.
