Eggnog Spice Cake

    Ingredients:

    • 1 box spice cake mix
    • Eggs, vegetable oil, and/or other ingredients, as called for in cake mix directions
    • 1 30 (fl.) oz. bottle eggnog
    • 1 cup powdered sugar
    • 1 half-teaspoon vanilla extract
    • 1 half-cup pecans, toasted and chopped

    Directions:

    1. Prepare the spice cake mix according to the package directions, substituting an equal amount of eggnog for the water.
    2. Bake in a prepared bundt pan according to package directions. Let cake cool to room temperature.
    3. In a small bowl, combine the powdered sugar and vanilla extract with 2 to 3 tablespoons of eggnog; drizzle glaze over the cake. Sprinkle with the toasted pecans.
    4. Slice and serve.
