Sausage Skillet Supper

    Ingredients:

    • 3/4 pound bulk pork hot sausage
    • One (16-ounce) can unsalted pinto beans, rinsed and drained
    • One (14 1/2-ounce) can unsalted stewed tomatoes, un-drained
    • 1 cup uncooked long grain rice
    • 1 cup water
    • 2/3 cup picante sauce or salsa

    Directions:

    1. In a large skillet, crumble sausage.
    2. Cook until no longer pink; drain.
    3. Add the remaining ingredients.
    4. Bring to a boil.
    5. Reduce heat, cover and simmer for 20-25 minutes or until rice is tender.
