Salsa Turkey Meatloaf

    Ingredients

    • 1 lb. ground turkey
    • 1 egg
    • cooking spray
    • 1/2 bread crumbs
    • 1 onion, finely diced
    • 1 garlic clove, minced
    • 3/4 salsa, divided

    Directions

    Preheat oven to 400°. Coat 5×9-inch loaf pan with cooking spray. In large mixing bowl, combine turkey, egg, bread crumbs, onion, garlic, and 1/2 cup salsa. Mix throughly. Place turkey mixture in loaf pan and spread evenly. Top with remaining 1/4 cup salsa. Bake 50-60 minutes.
