Rhubarb Cake

    Ingredients:

    • 1 1/2 c. brown sugar
    • 1 egg
    • 1 c. milk
    • 1 tsp. soda
    • 2 c. flour
    • 1 c. Crisco shortening
    • 1 tsp. salt
    • 1 tsp. vanilla
    • 1 1/2 c. rhubarb, cut fine 

    Ingredients For Topping:

    • 1/2 c. sugar
    • 1 tsp. cinnamon

     

    Directions:

    1. Mix together brown sugar, egg, milk, soda, flour, shortening, salt, vanilla and rhubarb.
    2. Pour into a greased 9×13 pan.
    3. Mix topping ingredients and sprinkle on top of batter.
    4. Bake at 350 degrees for 30 minutes.
    5. Serve with cool whip when cool.
