    Pumpkin Torte

    This tastes very much like pumpkin pie, only much faster and easier to make than pie.

    Crust Ingredients:

    • 1 cup all purpose flour
    • 1/2 cup brown sugar
    • 1/2 cup quick oats
    • 1/2 cup butter, melted

    Filling Ingredients:

    • 1 cup sugar
    • 1 cup brown sugar
    • 5 Tbsp. flour
    • 1/2 tsp. salt
    • 1/2 tsp. cinnamon
    • 1/2 tsp. nutmeg
    • 1/2 tsp. pumpkin pie spice
    • 3 eggs, separated
    • 3 cups milk, scalded
    • 1 cup pumpkin

    Directions:

    1. Combine crust ingredients and press into a 9-by-13-inch pan.
    2. Bake at 350 F for 10 minutes.
    3. Combine dry ingredients, add egg yolks and pumpkin. Mix well; add scalded milk and then stiffly beaten egg whites.
    4. Pour over crust and bake an additional 50 to 55 minutes.
    5. Serve with whipped topping if desired.
