    Pickled Red Onions

    Ingredients:

    • 1 med. red onion, sliced thinly
    • 3/4 cup water
    • 2/3 cup white wine or cider vinegar
    • 1 Tbsp. sugar
    • 1 tsp. kosher salt
    • 1 tsp. dill
    • 1 tsp. whole peppercorns

    Directions:

    1. In a bowl, whisk together the first four ingredients until sugar and salt dissolve.
    2. Place onions and remaining ingredients into a large glass jar; pour vinegar mixture over onions.
    3. Seal and let stand for at least 2 hours at room temperature. Refrigerate for up to 2 weeks.
