    Pancake Muffins on the Go

    Ingredients:

    • 2 cups all-purpose flour
    • 3 Tbsp. granulated sugar
    • 1 1/2 tsp. baking powder
    • 1 tsp. baking soda
    • pinch kosher salt
    • 2 cups buttermilk
    • 1 egg
    • 1/4 cup melted butter
    • Individual Ingredient

    Directions:

    1. Preheat oven to 350 F. Spray a mini-muffin pan with nonstick baking spray or use muffin liners and set aside.
    2. Whisk together flour, sugar, baking powder, baking soda and salt in a large bowl.
    3. In a separate bowl, mix wet ingredients: buttermilk, egg and melted butter in a 2-cup measuring cup.
    4. Pour the buttermilk mixture slowly into the flour mixture, stirring to combine as you pour. Allow the batter to rest for about 3 minutes.
    5. Scoop pancake batter and fill each cup in the pan about half full.
    6. Bake for 13 to 15 minutes, until a toothpick inserted in the center comes out clean.
    7. Serve with syrup. You also can add mini chocolate chips to batter before baking.
