Mexican Bean Dip

    Ingredients:

    • 2 cups canned or cooked dried beans (suggested: black beans or pinto)
    • 1/4 cup sour cream
    • 1/2 cup shredded sharp cheddar cheese
    • 1 tsp. chili powder
    • ¼ tsp. garlic powder
    • 1 tsp. onion, finely diced, or onion powder
    •  

    • Hot sauce (optional) to taste

    Directions:

    1. Heat beans in a sauce pot. As the beans warm, mash them with a fork.
    2. Mix the sour cream, shredded cheese, spices, into the pot and stir until the cheese is melted and the bean mixture has a creamy consistency.
    3. Pour bean dip into a serving bowl. Add hot sauce and a sprinkling of shredded cheddar, if you like.
    4. Serve with vegetable sticks, low-salt crackers, or low-salt tortilla chips.
