Lemon Rosemary Zucchini

    Ingredients:

    • 1 Tbsp. olive oil
    • 1 med. yellow bell pepper, diced
    • 2 tsp. fresh rosemary, finely minced
    • 2 cups zucchini, chopped
    • 1-3 tsp. lemon juice, to taste
    • salt and pepper to taste

    Directions:

    1. In a medium non-stick skillet, heat olive oil over medium heat. Add yellow pepper and rosemary and saute for 2 minutes. Add zucchini and salt and pepper. Continue to saute for another 4-5 minutes or until zucchini is just tender. Remove from heat and stir in lemon juice. Serve hot.
