Lemon Jello Salad

    Ingredients:

    • 2 pkg. lemon Jello
    • 2 cups boiling water
    • 2 cups 7-Up
    • 2 cups crushed pineapple, drained, juice reserved for topping
    • 1 cup mini marshmallows
    • 2 lg. bananas, sliced

    Topping:

    • 1/2 cup sugar
    • 2 Tbsp. flour
    • 1 cup pineapple juice
    • 1 egg, slightly beaten
    • 2 Tbsp. butter
    • 1 cup whipped cream

    Directions:

    1. Dissolve Jello in boiling water and let cool. Fold in 7-up, pineapple, marshmallows and bananas in the Jello and let set until it becomes firm.
    2. For the topping: Combine sugar, flour, juice and egg. Cook over low heat until thick. Remove from heat, add butter and chill.
    3. After cool, fold whipped cream into mixture.
