    Lemon Blueberry French Toast

    Ingredients:

    • 8 1-inch thick slices semolina bread
    • 1 1/2 Tbsp. lemon zest
    • 6 Tbsp. butter
    • 2 Tbsp. sugar
    • 3 lg. eggs
    • 1 cup half and half
    • 1 Tbsp. vanilla extract
    • 2 Tbsp. powdered sugar
    • 1 pint blueberries

    Directions:

    1. Heat oven to its lowest temp and set the rack to the middle level.
    2. In a large bowl, whisk together the eggs, half and half, sugar and vanilla.
    3. Heat a non-stick pan to medium-low heat and add half of the butter.
    4. Soak four pieces of bread in the bowl for at least 30 seconds. Remove bread from the bowl, letting it drip for a bit before placing it in the pan.
    5. Fry for 3 to 4 minutes per side or until golden on both sides. Place cooked French toast onto a baking sheet and right into the oven to keep warm.
    6. Add the rest of the butter to the pan and repeat the frying process for subsequent batches.
    7. When all the pieces are finished cooking, plate and divide the blueberries and lemon zest.
    8. Sprinkle with powdered sugar and serve with butter and maple syrup.
