    Homemade Mayonnaise

    Ingredients:

    • ¾ cup light olive oil
    • 1 large egg
    • 1 Tbsp. lemon juice
    • 1 tsp. Dijon mustard
    • ½ tsp. salt
    • ¼ tsp. ground black pepper

    Directions:

    1. Place oil, egg, lemon juice, Dijon mustard, salt and pepper in a large bowl. Use a hand-held immersion blender to blend mixture until fully emulsified, taking care not to overblend. Store in a tightly closed container; refrigerate until using.
