Fresh Fruit Cake

    Ingredients For Batter:

    • 1/2 cup butter
    • 1-1/2 cup sugar
    • 2 eggs
    • 3 cups flour
    • 4 tsp. baking powder
    • 1 cup milk
    • 1 tsp. vanilla
    • 1 tsp. salt

    Ingredients For Filling:

    • 4 cups fresh fruit; rhubarb, peaches, etc.
    • 1/2 cup sugar
    • 1-3oz. pkg. strawberry jello

    Ingredients For Topping::

    • 1/4 cup flour
    • 1/2 cup sugar
    • 3 Tbsp. butter

    Directions:

    1. Mix first eight ingredients as for cake batter; it will be very stiff.
    2. Smooth batter into a greased 13x9x2″ pan.
    3. Mix fruit, sugar and jello.
    4. Pour over batter mixture.
    5. Combine topping ingredients and sprinkle over fruit mixture.
    6. Bake at 375° for 35-40 minutes.
