    Fall Breakfast Scramble Hash

    Ingredients:

    • 1/2 cup quartered baby potatoes
    • 1/2 cup sweet potatoes, diced in 1/2-inch pieces
    • 1 1/2 tbsp. olive oil
    • To taste salt, pepper, garlic powder and chili powder
    • 1/2 cup quartered white mushrooms
    • 1/2 cup sliced zucchini
    • 1/3 cup broccoli sprouts
    • 2 eggs

    Directions:

    1. Preheat oven to 375 F.
    2. Toss potatoes and sweet potatoes with 1/2 tablespoon of olive oil and season with salt, pepper, garlic powder and chili powder. Put on a baking tray and cook in the oven for 15 minutes, stirring every 5 minutes.
    3. Add in the zucchini and mushrooms; mix in another 1/2 tablespoon of olive oil and mix well with the potatoes and sweet potatoes. Roast for another 5 to 10 minutes. Make sure the veggies have nice caramelization.
    4. Take out the roasted veggies and plate. Finish with two eggs prepared the way you like.
