No Fail Pie Crust

    Ingredients:

    • 3 cups flour
    • 1/4 teaspoon baking powder
    • 1 1/2 cup shortening (Not butter!)
    • 1 egg
    • 1/2 teaspoon salt
    • 1 tablespoon vinegar
    • About 6-7 tablespoons ice water

    Directions:

    1. Combine dry ingredients and cut shortening in with a pastry blender or two knives.
    2. In electric blender: mix egg, vinegar and water.
    3. Add to other ingredients, stirring with a fork until pastry forms a ball.
    4. DO NOT OVERMIX!
    5. Divide dough for crusts and form into balls.
    6. Allow to rest in refrigerator, if desired, but warm to room temperature before rolling.
    7. Roll 1/8” thick, starting from center using light strokes.
    8. Roll pastry over rolling pin; unroll over pie plate, fitting loosely onto bottom and sides.
    9. Trim and crimp edges as desired.

    YIELD: 3-4 single crusts
