    Crunchy Pea Salad

    Ingredients:

    • 10 oz. bag frozen peas
    • 1 cup diced celery
    • 1 cup cauliflower, chopped
    • 1/4 cup green onion, diced
    • 1/2 cup cooked bacon, chopped
    • 1 cup cashews, chopped
    • 1/2 cup shredded cheddar cheese
    • 1/2 cup sour cream
    • 1 cup Ranch dressing

    Directions:

    1. Allow peas to thaw and rinse under cold water in colander. Drain well and spread out on a rimmed sheet pan lined with paper towels to absorb excess moisture.
    2. In a large bowl, combine peas, celery, cauliflower, green onion, bacon, cheese and cashews.
    3. In a separate small bowl, stir together the sour cream and ranch dressing and add to large bowl ingredients until well coated. Refrigerate until serving.
