Coconut Chocolate Chip Cookies

    Ingredients:

    • 1/2 cup butter, softened
    • 3/4 cup sugar
    • 1 egg
    • 1/2 teaspoon coconut extract
    • 1 cup plus 2 tablespoons all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup (6 ounces) semisweet chocolate chips
    • 1/2 cup flaked coconut

    Directions:

    1. In a large bowl, cream butter and sugar.
    2. Beat in egg and coconut extract.
    3. Combine the flour, baking soda and salt; add to the creamed mixture.
    4. Stir in chocolate chips and coconut.
    5. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets.
    6. Bake at 375° for 11-13 minutes or until golden brown.
    7. Remove to wire racks to cool.
    8. Yield: about 1 1/4 dozen.
