Classic Egg Salad

    Ingredients:

    • 6 HARD-BOILED EGGS, sliced
    • 1/4 cup mayonnaise
    • 2 tsp. fresh lemon juice
    • 1 tbsp. minced onion
    • 1/4 tsp. salt
    • 1/4 tsp. pepper
    • 1/2 cup finely chopped celery
    • Lettuce leaves

    Directions:

    1. Reserve 4 center egg slices for garnish, if desired.
    2. Chop remaining eggs.
    3. Mix mayonnaise, lemon juice, onion, salt and pepper in medium bowl.
    4. Add chopped eggs and celery; mix well.
    5. Refrigerate, covered, to blend flavors.
    6. Serve on lettuce leaves; garnish with reserved egg slices.
