Carrot Casserole

    Ingredients

    • 1 lb. carrots, sliced and cooked until tender
    • 1 medium onion, chopped
    • 3 tablespoons margarine
    • 1 can cream of celery soup
    • 1 cup mild Cheddar cheese, grated
    • 1 cup stuffing mix, crumbled

    Directions

    Drain carrots. saute onion in margarine. Combine all ingredients except stuffing mix. Place in casserole; sprinkle stuffing mix over top. Bake at 350° about 30 minutes.
