    Carrot Cake Raisin Muffins
    Yield: Makes 1 dozen

    Ingredients:

    • 18-oz. pkg. carrot cake mix
    • 15-oz. can pumpkin
    • 1/3 cup golden raisins

    Directions:

    1. Mix dry cake mix and pumpkin together to make a very thick batter. Add raisins and mix well.
    2. Fill paper-lined muffin cups 2/3 full.
    3. Bake at 400˚F for 20 minutes, until muffins test done.
