Candy Cane Snowballs

    Ingredients:

    • 2 cups butter, softened
    • 1 cup confectioners’ sugar
    • 1 teaspoon vanilla extract
    • 3 1/2 cups all-purpose flour
    • 1 cup chopped pecans
    • 8 ounces white candy coating, coarsely chopped
    • 1/3 to 1/2 cup crushed peppermint candy

    Directions:

    1. In a large bowl, cream butter and confectioners’ sugar until light and fluffy.
    2. Beat in vanilla.
    3. Gradually add flour and mix well. Stir in pecans.
    4. Refrigerate for 3-4 hours or until easy to handle.
    5. Roll into 1-inch balls.
    6. Place 2 inches apart on ungreased baking sheets.
    7. Bake at 350° for 18-20 minutes or until lightly browned.
    8. Remove to wire racks to cool.
    9. In a microwave, melt candy coating, stir until smooth.
    10. Dip the top of each cookie into the candy coating; allow excess to drip off.
    11. Dip into peppermint candy.
    12. Place on waxed paper; let stand until set.
