Breakfast Casserole

    Ingredients:

    • 1 lb. bag hash brown potatoes
    • 1 lb. ground sausage, cooked and drained
    • 6 eggs
    • 2 cups milk
    • 1 tsp. salt (optional)
    • 2 cups shredded cheese (cheddar or mozzarella)

    Directions:

    1. Grease a 9×12” baking dish.
    2. Spread potatoes in bottom of dish. Spread cooked, drained sausage over the potatoes.
    3. Mix together the eggs and milk, and salt if desired. Pour over top of sausage and potatoes. Sprinkle shredded cheese over all. Cover and chill overnight.
    4. Bake at 350° for 45 minutes uncovered. For a 10×15” baking dish, double all ingredients and bake for 60 minutes.
