    Baked Eggplant

    Ingredients:

    Directions:

    1. 1 eggplant
    2. 3 onions
    3. 3 tomatoes
    4. 2 cloves garlic
    5. 1 green pepper
    6. 4 Tbsp. melted butter
    7. salt and pepper
    8. Peel and slice thin the eggplant, onion, pepper and tomatoes.
    9. Place in layers in a buttered baking dish, seasoning with salt and pepper, and pour melted butter over all.
    10. Bake in a moderate oven until tender.
