    Applesauce Spice Cupcakes

    Ingredients:

    • 1/3 cup butter, softened
    • 3/4 cup sugar
    • 2 lg. eggs at room temperature
    • 2 tsp. vanilla extract
    • 1 1/3 cups all-purpose flour
    • 1 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1/2 tsp. salt
    • 1 tsp. ground cinnamon
    • 1/2 tsp. ground nutmeg
    • 1/8 tsp. ground cloves
    • 3/4 cup applesauce
    • 1 cup prepared cream cheese frosting

    Directions:

    1. In a large bowl, cream butter and sugar.
    2. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
    3. Combine dry ingredients; add to creamed mixture alternately with applesauce.
    4. Fill greased or paper-lined muffin cups two-thirds full.
    5. Bake at 350 F for 25 minutes or until a toothpick inserted in the center comes out clean.
    6. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes.
