    Meatball Splashes

    Ingredients:

    • 1 1/2 to 2 cups Italian bread crumbs
    • 2 lg. eggs
    • 4 cloves garlic, minced
    • 2 cups baby spinach, chopped
    • 1/4 cup Parmesan, finely grated
    • 1/2 tsp. dried Italian seasoning
    • Kosher salt and pepper
    • 1 lb. ground beef
    • 2 cups spaghetti sauce, prepared
    • 6 hoagie buns, toasted
    • 2 cups mozzarella cheese, grated

    Directions:

    1. Heat oven to 400 F and line rimmed baking sheet with nonstick foil.
    2. In a medium mixing bowl, add eggs, chopped garlic, chopped spinach, Parmesan and seasonings and mix to combine.
    3. Add beef and bread crumbs and mix until combined. Form into small meatballs and place on prepared baking sheet. Bake until done and browned, 20 to 25 minutes.
    4. In the meantime, warm spaghetti sauce in a small saucepan. Serve meatballs on toasted hoagie buns topped with cheese.
