Chilled Peach Soup

    Ingredients:

    • 1 lb. fresh peaches
    • 1 cup yogurt or buttermilk
    • 2 tsp. freshly squeezed lemon juice
    • 1/8 tsp. almond extract
    • 4 Tbsp. sliced almonds
    • Sprigs of fresh mint

    Directions:

    1. Place the peaches, yogurt, lemon juice and almond extract in a food processor or blender. Process until smooth.
    2. Refrigerate until chilled, about 2 hours. Divide between chilled soup bowls, garnish with almonds and mint, and serve immediately.
