Baba’s Zucchini Bread

    Ingredients:

    • 3 eggs
    • 2 cups sugar
    • 1 cup oil
    • 2 Cups shredded zucchini
    • 2 tsp. vanilla
    • 20 oz. crushed pineapple, drained
    • 3 cups flour
    • 1 tsp. baking soda
    • 1 tsp. salt
    • 1 tsp. baking powder
    • 1 tsp. cinnamon

    Directions:

    1. Preheat oven to 325°.
    2. Spray 2 loaf pans with cooking spray, lightly flour. With a mixer, combine eggs, sugar, oil, zucchini, vanilla and pineapple.
    3. Add flour, baking soda, salt, baking powder and cinnamon.
    4. Mix well.
    5. Pour into 2 loaf pans.
    6. Bake for 1 hour or until a toothpick inserted in the center of the pan comes out clean.
    7. Cool on a rack for 15 minutes, then remove from pan to cool completely.
