Pumpkin Cake with Cream Cheese Icing

    Reader Recipe: Gaye V. Ochs of Leeper, PA

    Ingredients for Cake:

    • 2 cups sugar
    • 4 eggs
    • 1 cup salad oil
    • 2 cups pumpkin
    • 2 cups all-purpose flour
    • 2 tsp. cinnamon
    • 2 tsp. baking soda
    • 1/2 tsp. salt

    Ingredients for Icing:

    • 1 stick butter
    • 1 1-lb. box powdered sugar
    • 8 oz. softened cream cheese
    • 2 tsp. vanilla
    • 1 cup chopped nuts

    Directions for Cake:

    1. With a mixer: combine sugar, eggs, oil, pumpkin, flour, cinnamon, soda and salt in a bowl.
    2. Turn into large 13″x9″ pan, greased and floured.
    3. Bake in 350 degree oven for 35-45 minutes.

    Directions for Icing:

    1. Blend butter, powdered sugar, cream cheese and vanilla in a mixer and spread on top of cooled cake.
    2. Sprinkle nuts on top.
