    Corned Beef and Cabbage (PIC)

    Ingredients:

    • 4 medium potatoes, peeled and quartered
    • 1 lb. carrots, cut into large chunks
    • 1 onion, cut into wedges
    • 3 cups water
    • 2 Tbsp. sugar
    • 2 Tbsp. cider vinegar
    • 3 cloves garlic, minced
    • ½ tsp. ground black pepper
    • 3 lb. corned beef brisket with spice packet, cut in half
    • 1 small head cabbage, cut into wedges

    Directions:

    1. Gather all ingredients. Place potatoes, carrots and onion into a 5-quart slow cooker.
    2. Combine water, sugar, vinegar, garlic, black pepper and contents of spice packet in a small bowl; pour over vegetables. Top with beef brisket and cabbage.
    3. Cover and cook on low until beef and vegetables are tender, 8 to 9 hours.
