    Every Day Side Salad

    Ingredients:

    • 1 cucumber, peeled and chopped
    • 1 cup cherry tomatoes
    • 2 scallions, chopped
    • 1 Tbsp. olive oil
    • 1/3 green bell pepper, chopped
    • 1/4 avocado, chopped
    • 1/4 cup olives, pitted and chopped
    • 1/4 cup feta cheese
    • 1 Tbsp. Greek Seasoning

    Directions:

    1. Put all ingredients into a bowl and mix for a great side salad. Can be doubled and just add the dressing each day. Or, add some greens like romaine, arugula or spinach to make it a more hardy dinner salad.
