    Lemon Summer Brownies

    Ingredients:

    • ¾ cup all-purpose flour
    • ¾ cup white sugar
    • ½ cup unsalted butter, softened
    • ½ tsp. sea salt
    • 3 large eggs
    • 2 Tbsp. lemon juice
    • 1 Tbsp. lemon zest

    Lemon Glaze Ingredients:

    • 1 cup confectioners’ sugar
    • ¼ cup lemon juice, or to taste
    • ¼ tsp. vanilla extract
    • 1 Tbsp. lemon zest

    Directions:

    1. Gather all of your ingredients. Preheat oven to 350 F. Grease an 8-by-8-inch square baking dish.
    2. Beat flour, white sugar, butter and salt together in a bowl using an electric mixer until well mixed.
    3. Whisk eggs, 2 tablespoons lemon juice and 1 tablespoon lemon zest together in a separate bowl.
    4. Pour egg mixture into flour mixture; beat on medium speed with an electric mixer until smooth, about 3 minutes. Pour batter into prepared baking dish.
    5. Bake in preheated oven until a toothpick inserted in the center comes out clean, 23 to 25 minutes.
    6. Cool on a wire rack until bottom of dish is warm to the touch.
    7. Make the lemon glaze: Whisk confectioners’ sugar, 1/4 cup lemon juice, vanilla extract and lemon zest together in a bowl until smooth; spread over cooled brownies.
