    Mini Bacon and Blue Burger

    1 pound ground beef

     

    3 ounces crumbled blue cheese

     

    3 slices bacon, cooked crisp and chopped

     

    Leaf lettuce

     

    8 mini rolls or buns

     

    1 head roasted garlic (optional)

     

    1/2 cup mayonnaise

     

    Freshly ground pepper to taste

     

    Divide ground beef into 16 equal pieces and shape into flat patties. Combine blue cheese and bacon; place 1 heaping tablespoon on each of eight patties; top with remaining patties. Press edges together and reshape. Preheat grill on high. When hot, reduce temperature to medium. Season burgers with pepper and grill to desired doneness (160° recommended internal temperature). Place lettuce on buns. Top with burgers, roasted garlic and a dollop of mayonnaise.
