    Breakfast Sandwiches

    Ingredients:

    • 4 large eggs
    • To taste Kosher salt and pepper
    • 1 Tbsp. olive oil
    • 4 slices extra-sharp cheddar cheese
    • 4 English muffins or bagels, toasted
    • 1 cup baby spinach
    • 4 thin slices ham or cooked bacon

    Directions:

    1. In a bowl, beat eggs with 1 tablespoon water and ¼ teaspoon each salt and pepper.
    2. Heat oil in a large non-stick skillet on medium heat.
    3. Add eggs and cook, stirring with a rubber spatula every few seconds, to desired doneness.
    4. Spoon onto bottom half of each muffin and top with cheese, spinach and protein.
    5. Top with remaining muffin half.
