    Pumpkin Butter

    Ingredients:

    • 3½ cups fresh or canned pumpkin puree
    • ¾ cup unsweetened apple juice/apple cider
    • ⅔ cup pure maple syrup
    • 1½ Tbsp. pumpkin pie spice
    • ¼ tsp. salt
    • 1½ tsp. lemon juice
    • ½ tsp. pure vanilla extract

    Directions:

    1. In a large, deep pot set over medium heat, combine the pumpkin purée, apple juice, maple syrup and spices.
    2. Bring to a low simmer and cook, stirring frequently, for 30 to 45 minutes or until thickened to your desired consistency.
    3. Stir in lemon juice and vanilla. Allow to cool a bit before transferring to an airtight container and storing in the refrigerator.
