Frozen Peach Pie Filling

    Ingredients

    • 1 peck peaches
    • 8 s water
    • 3 1/2 s sugar
    • 1 1/2 Therm-Flo
    • 1/2 corn syrup (light)
    • 1 (3 oz.) box peach gelatin
    • 1 (3 oz.) box orange gelatin

    Directions

    Heat 6 cups water and sugar in large kettle. Mix Therm-Flo (available at bulk food stores) with 2 cups water. Add mixture to hot water, stirring quickly. Cook until clear, about 5 minutes. Add corn syrup and gelatins. Cool and add sliced or diced peaches. Put in freezer containers, label and freeze.
    To use: Thaw filling in refrigerator. Pour into baked pie shell. Top with whipped topping.
