Italian-Style Fried Rice

    Ingredients

    • 8 artichoke hearts, chopped
    • 1 cup onions, thinly sliced
    • 2 cloves garlic, minced
    • 1 shallot, minced
    • 3 tablespoons olive oil
    • 2 cups spinach, shredded
    • 4 cups cold cooked rice
    • 3 tablespoons grated Sapsago or Parmesan cheese

    Directions

    In large nonstick frying pan, saute artichokes, onions, garlic and shallots in 1 tablespoon oil until tender, about 4 minutes. Add spinach and saute until spinach wilts. Transfer to large bowl. saute rice in remaining oil until heated through. Stir in spinach mixture. Sprinkle with cheese.
