Tofu Pesto Salad Dressing

    Ingredients

    • 1/4 slivered almonds
    • 2 tablespoons chopped, sun-dried tomatoes
    • 3 cups spinach leaves
    • 2 teaspoons minced garlic
    • 1 (12.3-ounce) package silken, soft tofu, drained
    • 1 soybean oil
    • 1/4 balsamic vinegar
    • 1/4 grated Romano cheese
    • 1/4 soy sour cream
    • 1 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 teaspoon pepper

    Directions

    In blender or food processor, finely chop almonds and sun-dried tomatoes. Add spinach and garlic; blend until smooth. Add remaining ingredients; blend until smooth. Serve over salad greens or pasta.
