Maple Glazed Squash

    Ingredients:

    • 2 medium acorn squash
    • salt and pepper to taste
    • 1 cup maple syrup
    • 1 medium tart apple, peeled and chopped
    • 2 Tbsp. raisins, optional
    • 1 tsp. ground cinnamon

    Directions:

    1. Cut squash into 1-inch rings and remove seeds.
    2. Place squash in a greased 9×13 baking dish. Sprinkle with salt and pepper.
    3. In a bowl, combine remaining ingredients; pour over quash.
    4. Cover and bake 50-60 minutes or until tender. Yield: 6 servings.
