Potato Soup

    Ingredients:

    • 1 cup diced potatoes
    • 1/2 cup sliced carrots
    • 1/2 cup chopped celery
    • 1/4 cup chopped onion
    • 1/8 teaspoon black pepper
    • 3/4 cup water
    • 1 can cream style corn
    • 1 can evaporated skim milk
    • 1/2 cup shredded low fat cheddar cheese

    Directions:

          

    1. Remember to wash your hands!  
    2. Combine potatoes, carrots, celery, onion and seasonings in a soup pot. 
    3. Add 3/4 cup water. 
    4. Cover and simmer for 10 minutes.
    5. Add corn and pepper. 
    6. Cook 5 minutes more until vegetables are done.
    7. Add evaporated milk and cheese. 
    8. Stir until cheese melts and chowder is heated through. 
    9. Do not boil.

    Makes 4 servings
