Fudgy Peanut Butter Bars

    Reader’s Recipe : D. Flinner of Canton, OH

    Ingredients for Cookie Base:

    • 1 1/2 cup flour
    • 3/4 cup chopped dry roasted peanuts
    • 1/2 cup brown sugar
    • 1/2 cup margarine, melted

    Ingredients for Topping:

    • 2 cups semi-sweet chocolate morsels
    • 3/4 cup creamy or crunchy peanut butter
    • 1/3 cup powdered sugar

    Directions for Cookie Base:

    1. Combine flour, peanuts, brown sugar and margarine in a bowl.
    2. Press onto bottom of a 13″ x 9″ baking pan.
    3. Bake in a preheated 350 degree oven for 10 – 12 minutes, or until light brown around edges.

    Directions for Topping:

    1. Melt chocolate chips and peanut butter in a medium microwave safe bowl for 1 minute on high; stir.
    2. Cook on high additional 10-20 second intervals, stirring until smooth.
    3. Add powdered sugar, stirring vigorously until smooth.
    4. Spread over hot cookie base.
    5. Chill just until chocolate is no longer shiny.
    6. Serve at room temperature. Makes 36 bars.
